Four Ingredients Yogurt Cake

Ingredients
  

  • 1 1/2 cup vanilla yogurt regular or dairy free
  • 4 eggs
  • 5 Tbsp tapioca flour
  • 1/2 cup fresh blueberries
  • sugar glaze optional

Equipment

  • 1 bowl
  • 1 whisk
  • 1 baking pan

Method
 

  1. Combine vanilla yogurt with eggs and blend till very smooth.
  2. Sift tapioca flour over yogurt mixture and fold in thoroughly.
  3. Pour batter in a parchment lined baking dish and top with blueberries.
  4. Bake in a preheated oven at 350 degrees for about one hour.
  5. Cool before removing from the pan.
  6. Drizzle with glaze if desired.
