"Everything Bagel" Coconut Loaf with Olives and Herbs

This grain-free coconut loaf with olives and herbs is great for breakfast or a healthy afternoon snack

Ingredients
  

  • 3/4 cup coconut flour
  • 1/3 cup flaxmeal
  • 4 eggs
  • 1/4 cup olive oil
  • 1/4 cup coconut or almond milk
  • 1 tsp baking soda
  • 1 tsp coarse sea salt
  • 1/2 tsp fresh oregano
  • 2 tsp "Everything Bagel" seasoning plus more to top
  • 7-8 pitted olives chopped

Method
 

  1. Combine separate wet and dry ingredients, mix well and gradually combine both together.
  2. Add chopped olives and mix well again. Batter will be thick.
  3. Form a loaf or separate oval or round rolls.
  4. Top with more seasoning on top.
  5. Bake in a pre-heated oven at 350F degrees for 35-40 minutes for 1 loaf or 20-30 minutes for smaller rolls, size depending.
  6. Cool it off before slicing.

Notes

You can add any other mix-in ingredients instead of or in addition to olives. Other fresh herbs or sun dried tomatoes would go nicely in this recipe as well.
