"Everything Bagel" Coconut Loaf with Olives and Herbs

This grain-free coconut loaf with olives and herbs is great for breakfast or a healthy afternoon snack

Ingredients
  

  • 3/4 cup coconut flour
  • 1/3 cup flaxmeal
  • 4 eggs
  • 1/4 cup olive oil
  • 1/4 cup coconut or almond milk
  • 1 tsp baking soda
  • 1 tsp coarse sea salt
  • 1/2 tsp fresh oregano
  • 2 tsp "Everything Bagel" seasoning plus more to top
  • 7-8 pitted olives chopped

Instructions
 

  • Combine separate wet and dry ingredients, mix well and gradually combine both together.
  • Add chopped olives and mix well again. Batter will be thick.
  • Form a loaf or separate oval or round rolls.
  • Top with more seasoning on top.
  • Bake in a pre-heated oven at 350F degrees for 35-40 minutes for 1 loaf or 20-30 minutes for smaller rolls, size depending.
  • Cool it off before slicing.

Notes

You can add any other mix-in ingredients instead of or in addition to olives. Other fresh herbs or sun dried tomatoes would go nicely in this recipe as well.
