Summer Contemplations
Long time no talk!
What’s been happening with you?
It’s summer. It’s hot. It’s humid. And time feels like hot molasses too – thick strands of never ending contemplations. It’s been a year since my kid moved to South Carolina. I’m still trying to get used to him not being around. But, thus is life – kids grow up and make their own choices. I miss him dearly, but I know he’s loving a quieter and less hectic life than what NYC embodies. And he surely loves wide empty roads to ride his motorcycle. He now has Columbia bike crew, but he does visit his old NYC crew sometimes too. Yep, he’s still a big bike enthusiast. All my prayers I’ve been reciting since he was about 14 and started obsessing with motorcycles haven’t worked, so he’s on his third one now. Here’s a bunch of very expensive bikes that are a little crazy looking, just like their owners.

Last month the crew put in a nice dent in their bucket list – a ride through Tail of the Dragon track. Tail of the Dragon is a famous stretch of US 129, spanning 11 miles across North Carolina and Tennessee border, renowned for its 318 curves. Basically, a crazy road for crazy bikers. It took my kid over 7 hours just to ride there from South Carolina. The rest of the crew were on a road for 2 days, riding from NY. Like I said, an adventure for young and fearless.

This mama’s heart is fluttering just thinking about this all, yet you can’t stop grown kids from living the life they want, especially if they’re enjoying it.
From the mountains to the water – what’s happening with Mother Nature and all these floods?! Some are obviously more devastating than others. NYC just got flooded from a huge storm. Streets and subway stations were literally swimming. One of the times I was glad to work from home, otherwise, I’d be schlepping through rain rivers. And, I heard Chicago was just flooded too. Chi town and nearby suburbs, what’s happening, you good? (Said it with a NY accent.)

What’s Cooking This Week
It’s too hot to make anything complicated right now, but it doesn’t mean you can’t enjoy a nice summer dessert. This 4 ingredients yogurt cake is light, full of ripe berries and very calorie friendly if you use a sugar-free yogurt. You can even have a big slice for breakfast. It’s basically just yogurt, eggs and blueberries, plus a bit of starch. You can substitute with any other berries if you prefer or very finely chopped peaches instead of blueberries. This portion makes a small 6-7 inch cake, so make a double batch if you want a regular size one.
Four Ingredients Yogurt Cake
It’ll look like this – yummy!

All ingredients should be at room temperature before you bake.

Combine vanilla yogurt with eggs and blend till very smooth.

Sift tapioca flour over yogurt mixture and fold in thoroughly.
Pour batter in a parchment lined baking dish and top with blueberries.

Bake in a preheated oven at 350 degrees for about one hour.
Cool before removing from the pan.
Drizzle with glaze if desired.
You’re all ready for an afternoon tea.
It’s okay if you take a second slice, or third.
